Kad smo sve sredili za daleki put, bilo je samo pitanje gdje uglaviti neku lokalnu \u0161kolicu.<\/p>\n<p>Dina je prona\u0161la Cooking Sun negdje u bespu\u0107ima interneta i rezervirala nas za jutarnji program. Bili smo me\u0111u prvima pred malom, tipi\u010dno japanskom, ku\u0107icom. Nikog na ulicama, 35 stupnjeva u hladu, a sve zatvoreno i mirno kao da nikog nema u ku\u0107i. Nakon par minuta skupilo se jo\u0161 ne\u0161to ljudi i nakon nekog vremena odlu\u010dili smo se kucati na vrata. To zna\u010di \u010detiri razli\u010dita jela i Miso juhu. Za ve\u0107inu japanskih jela potreban vam je dobar &#8220;Dashi&#8221; (Da\u0161i). Dashi je vrsta temeljca koji se priprema od morskih algi i Katsuobushija. Katsuobushi je navodno najtvr\u0111a hrana na svijetu. To je vrsta tune koja se prvo su\u0161i i dimi danima na suncu, da bi se nakon toga premazala odre\u0111enom vrstom gljivica koje uzrokuju fermentaciju i potpuno isu\u0161ivanje, gotovo mumifikaciju. Obratite li pa\u017enju na sliku iznad, na\u0161a u\u010diteljica koristi ne\u0161to du\u017ee i \u010dvr\u0161\u0107e \u0161tapi\u0107e. Ti su \u0161tapi\u0107i (ryoribashi ili saibashi) tipi\u010dni i najkori\u0161teniji alat u japanskim kuhinjama. Koriste se za mije\u0161anje, okretanje i prebacivanje hrane na tanjure, ali nikako za jelo. Nau\u010dili smo tu i razliku izme\u0111u razli\u010ditih umaka od soje, i ono \u0161to smo iz naziva mislili kako je &#8220;Light&#8221; (svijetli, lagani) &#8211; dijetalan &#8211; nema veze s ni\u010dim. \ud83d\ude42 Tamni je umak od soje intenzivniji i gu\u0161\u0107i, koristi se u procesu kuhanja kako bi potamnio hranu i njegov se okus razvija grijanjem. Sve \u0161to vam treba je o\u0161tar no\u017e sa \u0161iljastim vrhom ili igla kako bi jednim potezom izvukli crijeva iz kozice. \ud83d\ude42 Kad pogledate kozicu na le\u0111ima ima dvije tamne linije, jednu s donje i jednu s gornje strane.
